Italian food reminds us of the lovely tangy sundried tomatoes that sit royally as toppings on pizza or bruschetta. They are tasty even as a salad veggie or a part of an open toast sandwich. But storebought tomatoes in oil are expensive and may contain chemicals and preservatives. The best solution is making these tomatoes in oil at home!

How to reconstitute dried tomatoes in oil at home?

  • Add the dried tomatoes in an airtight glass jar
  • Cover the tomatoes with olive oil
  • Add some salt
  • Keep refridgerated overnight and the tomatoes are ready to use.

However, a recipe quite close to my heart was taught to me by my Aunt who had the opportunity to travel and live in Italy. While in Italy, she learnt many authentic Italian recipes. One of which was reconstituting dry tomatoes in olive oil. This recipe is a special from her!

  • Add the dried tomatoes in an airtight glass jar
  • Cover the tomatoes with olive oil
  • Add some salt
  • Now add some finely sliced fresh basil, crushed garlic cloves, some black pepper balls and some roughly chopped oregano in the glass jar
  • You can use all the dry herbs instead of fresh too!
  • Stir once.
  • Now refridegerate overnight and the tomatoes are ready to use!

How long can you store tomatoes in oil?

The reconstituted tomatoes will stay good for 2 weeks in a refridgerator. Since there are no artificial preservatives, chemicals and stabilizers added to these tomatoes, it is recommended to make in small batches and consume within 2 weeks.

How can I use these dry tomatoes in oil?

Dried tomatoes in oil are perfect for many recipes like:

  • Bruschetta toppings
  • Sandwich fillings

  • Soups
  • Pasta
  • Curries

What to do with the remaining oil? Does it go to waste?

The remaining oil of the tomatoes is perfect for soups and salad dressings. You can use it as a dressing on every recipe where you use plain olive oil. This oil has all the flavour of the tomatoes and herbs (if you add them).
