Desi Cow Ghee - FAQ

What are the benefits of desi ghee?

Desi ghee has been a favourite in most Indian households. It is an ancient remedy for cold, cough and soft skin, but in the last few years the credibility of saturated fats like desi ghee has been debatable. Some believe that saturated fats are the bad fats but a growing body of research and most health experts agree that naturally occurring saturated fats such as desi ghee are actually good for your health. Here are six amazing health benefits that you can derive by using desi ghee regularly.

  1. Boosts digestion: According to Ayurveda expert, Dr. Ashutosh Gautam, "Ghee is one of the most easily digestible fats used for cooking. Ghee is a natural remedy for balancing the heat element (pitta) of the body. It aids in digestion, prevents constipation and helps in the excretion of toxins. Having half teaspoon of ghee with moong dal khichdi is a great way to detox."
  2. Helps in weight loss: Celebrity Nutritionist Rujuta Diwekar sets this myth straight by calling desi ghee the 'fat that makes you thin'. In her book, 'Don't Lose Your Mind, Lose Your Weight', she explains that the type of saturated fat that Desi Ghee has is the short-chain-fatty acid. This helps to burn the stubborn fat in the body while regulating your metabolism.
  3. High smoke point: Desi ghee has a high heat point which means that it doesn't burn easily while other oils may break down and release free radicals when heated at high temperatures. Free radicals are unstable molecules that can cause damage to your cells and also increase the risk of disease. Moreover, Indian cooking requires a lot of sauteing and therefore, it is better to use desi ghee which won't breakdown easily.
  4. Balances your hormones: According to Macrobiotic Nutritionist and Health Practitioner, Shilpa Arora, "The fat content in our body is mostly saturated fat and only 3% coming from other types. This ratio is absolutely important to know for our health and well-being. This prestigious golden elixir is rich in Vitamin K2 which builds hormones along with Vitamin A, D, E & K."
  5. Strengthens immunity and helps in bone development:  As kids, we were given a spoonful of desi ghee daily to boost our immunity and make our bones strong. Desi ghee acts as a strong microbial, anti-cancer and antiviral agent. It is a rich source of fat soluble vitamins that help in growth and development of the bones.
  6. Good for your heart: Vitamin K2 found in desi ghee helps in preventing calcium deposits in the arteries that can lead to blockages and obstruct blood flow. It lowers bad cholesterol levels and increases good cholesterol levels, thus maintaining a healthy balance Source: NDTV

What is Bilona Ghee?

Desi Cow Ghee is known as the golden medicine of Ayurveda. It is sometimes referred to as “clarified butter”, as all of the milk solids have been removed from it. After this process, you are left with a nutritious, easy to digest (lactose and casein free), healing oil that can be used as food or as medicine. Bilona is form the method used to make curd from whole milk. Then churn it to separate makhan from it and then boil it to get Ghee. This is called whole milk ghee and it is the costliest but has all medicinal properties of Desi cow’s milk. To manufacture 1 kg of such ghee, it takes approximate 35 liters of Desi cow milk. The only bi product is chaas (no milk is left as it is converted into curd). So this method is expensive.

How is ghee prepared? Do we follow the traditional Vedic Process?

Ideally Ghee can be prepared by using any milk: Cow, Buffalo, Goat or Sheep. But Pure Desi Ghee can be prepared only by using Cow milk. To make pure ghee by Ayurveda prescribed method, Butter (Loni/Makkhan) is churned out of Whole Curds made from Cow Milk. This butter (loni/makkhan) is then heated until all the water content is evaporated and only the fat content remains which is the Ghee. The churning process is done by using wooden churners (bilona). For the heating process, cow dung is most beneficial fuel.Depending upon the output and productivity, bilona is either hand churned or churned via motor.

What is the difference between Bilona hand churned Ghee and Bilona churned Ghee?

To make traditional Ghee, the curd is churned in a traditional Indian vessel called Bilona. This vessel is made out of wood. Bilona Hand Churned Ghee is where the curd is churned manually with hands using the Bilona. In other cases, the Bilona is attached to a motor which then churns the curd.

Holstein Cows, Jersey Cows and Desi Cows - FAQ

Why Desi Cows and not Holstein, Jersey cows?

In 1970’s, various foreign breed cows were imported in India with a view to increase the quantity of the milk produce in the country. These imports were made without considering the quality of milk which will be produced out of such cross breeding. The most important aspect of the native of these foreign cows went unnoticed at that time. The tropical climate in India was not really suitable for these Holstein cows. As a result they became more susceptible to diseases. Indian cows have sweat glands which foreign cows don’t. He sweat glands ensure that any toxins in the Cow’s system are let out in the form of sweat. The holstein unfortunately does not have these sweat glands. Hence the only way for toxins to exit the body is via urine, feces and milk. Thus, the Holstein cow has only two uses: Milk and Meat. The sweat glands in Desi Cows are the reason why even their urine and cow dung is used for various household, medicinal and spiritual purposes.

What are Desi Cows?

India has 37 pure cattle breeds, which are Desi Cows. Five of these — Sahiwal, Gir, Red Sindhi, Tharparkar and Rathi — are known for their milking prowess. A few others, such as Kankrej, Ongole and Hariana, belong to dual breeds that have both milch and draught qualities; ie, they are good plough animals. The rest are pure draught breeds. - Source Tehelka

How is the life of cows on our farms?

In any farm, at a time only 30% cows are in a milking state. So in non milking state, cows are left to relax and graze. They are neither injected with any hormones nor are subjected to any inhuman activity. They are encouraged to live a regular life. Every morning cows graze freely and openly in 20 acres grass fields. Certain grass are strategically planted to to provide nutrition to the cows ultimately improving the quality of milk. Even the fodder given to the cows is organic certified. Once cow stops giving milk permanently, it spends the rest of its life in the gaushala. Cows are not sent to slaughter house. When bulls are born on the farm, they are given for free to farmers with a written agreement which states that the farmer will not resell the bull to anyone else. If under any circumstances the farmer is not able to keep the bull then he passes on to another farmer in need free of cost.

Are the cows subject to hormone injections? Is the calf deprived of the milk for selling purposes? Is there any adulteration to increase the quantity of milk?

The cows at the farms of these brands are not subject to any Hormone injection. They are living in a safe and a healthy environment where they are even left to roam around across acres of owned land for grazing and relaxing. The Calf is not deprived of the Cow’s milk. Where are the farms located?

The products found on Bodhishop.in come from the vendor's farms located in Shahapur, Pune, Gujarat & Maharashtra. We are in a process of uploading pictures and videos of actual farms. Why do some of your ghee prices are lower than current market price? It takes around 20 litres to make pure ghee. Price of milk is Rs.66/- per litre. For a cowherd, the cost of milk is virtually less than half the MRP. The cowherd's family also supports in making the ghee which reduces the cost of processing. After the process of separating the butter from the buttermilk is complete, around 20 liters of buttermilk is still remaining. This buttermilk also gets sold in the market.
