How to make Gujrathi Dal Dhokli?
Step 1 - Pressure cook the dal
- In a steel bowl wash the tuvar dal
- Add 2 cups of water to the dal
- Add a pinch of asafoetida and turmeric to the dal
- In another bowl take peanuts
- Add enough water to cover the peanuts properly
- Add a pinch of sal to the peanuts
- Pressure cook both for 3 whistles and 10 minutes on a low flame
Step 2 - Prepare the dough
- In a bowl take the khapli gehu atta
- Add 1 teaspoon of oil
- Add cumin seed powder
- Add ajwain
- Add salt to taste
- Add water and knead in to a dough (chapati style dough)
Step 3 - Rest the dough
- Apply oil on the dough
- Cover and rest for 10 minutes
- Knead again and dough is ready
Step 4 - Make the chapati
- Roll the dough into a thick chapati
- The thickness should be more than a regular chapati but lesser than a stuffed paratha
Step 5 - Make the pieces
- Cut the chapati into small pieces
- You can make any shape like square or rectangle. Here I have made diamond shaped pieces
Step 6 - Check the dal
- The dal should be cooked properly. It is now ready for the tadka
- The peanuts will also be soft now
Step 7 - Make the tadka
- Heat oil in a kadhai
- Once hot, add the cumin seeds, curry leaves and green chilly
- Add a pinch of asafoetida
Step 8 - Add the dal
- Add the dal to the crackling tadka
- Add some water to adjust consistency
Step 9 - Add the spices
- At this stage you have to put in all the seasoning
- First add the red chilly powder
- Then goes in the salt
- Add jaggery and kokam
- Add the peanuts
- Allow the dal to come to a boil
Step 10 - Add the pieces
- Once the dal comes to a boil, add the dhokli that you have made
Step 11 - Cook the dhokli in the dal
- It might take 5 to 10 minutes for the dhokli to cook
- Cover and simmer the kadhai for 5 minutes.
- When the dhokli starts floating on the dal, it is ready
- Break one dhokli and check if it is done
- This is the time to add some water if the dal becomes to thick
Step 12 - Serve
- Add some chopped coriander and ghee to the dal dhokli and serve hot
